Jayni’s Kitchen: “The Polish Kitchen,” with Malgosia Stamm

Apple Pancakes

Ingredients:

3 large apples

3 cups all-purpose flour

3 cups lukewarm water

1/2 cup plain yogurt

1 tablespoon sugar

2 teaspoons vanilla extract

1 1/2 teaspoons salt

1/2 cup olive oil, divided

Powdered sugar

Directions:

Peel and slice the apples into thin slices and set aside. Place the flour and water in a large mixing bowl and whisk until combined. Whisk in the yogurt, sugar, vanilla extract and salt. Fold in the sliced apples.

Heat 2 tablespoons of the olive oil in a large non-stick skillet over medium heat. Ladle 4 spoonfuls of the batter into the skillet (making 4 small pancakes) and cook for 1 to 2 minutes, until set. Turn the pancakes over and cook for 1 to 2 minutes more. Transfer the pancakes to a large serving platter. Add more oil to the skillet as needed and cook the remaining pancakes, four at a time. Sprinkle the pancakes with powdered sugar. Serve hot or cold. Serves 6 to 8.
