Cookbook highlights best of ‘Jayni’s Kitchen’

It’s been eight years since Jayni Carey began her award-winning show, “Jayni’s Kitchen.” In that time, she’s made and tasted hundreds upon hundreds of recipes.

Now her fans can have easy access to some of her favorites in “The Best of Jayni’s Kitchen,” a new cookbook from Carey and Sunflower Publishing on sale now.

“I’ve wanted to put together a collection of recipes to share with the public for a long time because there have been so many great recipes prepared on ‘Jayni’s Kitchen’ over the years, thanks to our talented guests. Our viewers have repeatedly asked when we were going to publish a cookbook,” Carey says. “The goal was to come up with a cookbook made up of the many innovative, tasty and reliable recipes seen on the show.”

The book consists of more than 180 of the best recipes showcased on the show, which airs new episodes at 6:30 p.m. each Tuesday on Sunflower Broadband Channel 6 with repeats throughout the week. Appetizers, main dishes, desserts and more are among the hand-picked selections, including recipes for Butternut Squash Gnocchi with Double Butter Sauce, Green Papaya Salad and Rhubarb Upside Down Cake.

“It was a difficult process because we have produced about 250 shows and have prepared over 750 recipes over the last 7 1/2 years. It took me a month just to choose the recipes, then I continued to make adjustments as I shaped the book,” Carey says. “I looked for recipes that were original, tempting and fun to cook. I tried to put together a balanced book of recipes for all occasions that would appeal to all levels of cooks.

“I’m only sorry that I couldn’t fit in all of the wonderful recipes prepared on the show over the years. In the end, I think we have a excellent collection of recipes from all categories of cooking – from hors d’oeuvres to dessert.”

The book also includes some behind-the-scenes tidbits for fans wondering what goes into the making of the show.
