Tomato Mint Couscous

3/4 cup water

1/2 cup couscous

1 large tomato, cubed

2 teaspoons olive oil

1/4 cup chopped fresh mint

Salt and freshly ground black pepper

Bring water to a boil. Remove from heat, add couscous and tomatoes. Cover and let sit 5 minutes. Fluff up with a fork. Add olive oil, mint and salt and pepper to taste. Makes 2 servings.
