Shop owner finishes chocolatier program

Cheryl Wetherington, owner of Ricetta Chocolates, completed the Professional Chocolatier Program offered by Ecole Chocolat, a professional school of chocolate arts.

The school, based in Vancouver, British Colombia, conducts courses online. Wetherington received instruction in the history of chocolate; differences between major chocolate suppliers and products; how chemistry affects flavor and texture of chocolate; a variety of chocolate-making skills and techniques, including tempering, enrobing, decorating and molding; recipe development; and different varieties of chocolate.

Ricetta – formerly known as Riverfront Chocolates – is in the lobby of SpringHill Suites by Marriott, a hotel in the Lawrence Riverfront Plaza at Sixth and New Hampshire streets in downtown Lawrence.
