Chipotle to donate guacamole proceeds
Chipotle restaurants across the U.S., including two in Lawrence, will donate proceeds from sales of guacamole Wednesday to benefit The Land Institute in Salina.
Chipotle Mexican Grill, with more than 500 restaurants, plans to donate 100 percent of its guacamole sales, up to $50,000, to the institute’s ongoing efforts to develop Natural Systems Agriculture, a system that mimics nature’s own solutions to problems such as soil erosion, weed invasions, diseases and climate change.
The system transforms seasonal row crops such as wheat, corn and soybeans into perennial plants, lessening demands on labor and natural resources.
“We were so inspired by the work taking place at The Land Institute when we visited (it) in Salina,” said Steve Ells, Chipotle’s founder, chairman and CEO. “It’s important to us to support the leadership they are showing all of us on behalf of food and farms in America.”
