Short & Sweet
Here’s some nutty ways to add protein to diet:
Peanuts can be a useful source of protein, magnesium and other nutrients, including folate, according to the National Peanut Board.
The peanut board suggests ways of following the guidelines and varying items in a nutritious eating plan:
- A peanut-pasta salad, made by tossing roasted peanuts into a mix of cooked penne or other bite-sized pasta, sliced celery, carrots, red bell pepper and vinaigrette.
- A “trattoria rice” combination, made by fluffing rice and tossing it with chopped peanuts, fresh basil, sun-dried tomatoes and a sprinkle of Parmesan cheese.
- Asian-style grilled vegetable packets, made by topping partially thawed vegetable medleys with peanut oil, grated fresh ginger and dabs of peanut butter, on foil squares. Wrap, and grill or bake until hot and juicy.
