LMH chief joins Jayni to grill salmon
Join “Jayni’s Kitchen” this week for “Not Your Ordinary Hospital Food.”
Gene Meyer, CEO of Lawrence Memorial Hospital, and host Jayni Carey will prepare some healthy dishes.
A new show airs at 6:30 p.m. Tuesday each week on Sunflower Broadband Channel 6 and repeats at 8:30 p.m. and 10:30 p.m. The show is also broadcast at 8:30 p.m. Wednesday-Friday, 9:30 a.m. Sunday and 8:30 p.m. Monday.
Meyer and Carey will prepare the following recipes during this week’s show:
Grilled Salmon with Soy-Lemon Marinade
6 to 8 salmon fillets, about 3/4 inch thick
1/3 cup lemon juice
1 1/2 teaspoons soy sauce
1 1/2 teaspoons Worcestershire sauce
1 cup butter, melted
2 tablespoons fresh parsley, chopped
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon garlic powder
salt and black pepper, to taste
Rinse the salmon fillets under cold water and drain well on paper towels.
Combine the lemon juice, soy sauce and Worcestershire sauce in a small bowl. Stir in the melted butter, parsley, basil, oregano, garlic powder, salt and pepper.
Place the salmon in large baking dish and pour the marinade over the salmon. Cover and let stand for 30 minutes to 1 hour. Turn the salmon in the marinade once or twice.
Heat the gas or charcoal grill to the highest level. Place the salmon on the grill, skin side down. Sear this side for approximately 1 minute. Using a large metal spatula, turn the salmon over and remove the skin from the fish, which should come off easily. Reduce the heat to low on a gas grill, or if using charcoal, move the salmon over indirect heat.
Cover and grill for about 5 minutes per side, or until desired doneness is achieved.
Remove the salmon from the grill, cover with aluminum foil and let rest for about 5 minutes. Serve with lemon wedges and garnish with fresh parsley. Serves 6 to 8.
