Jayni to fix meal based on Heartland

Join “Jayni’s Kitchen” this week for “Recipes from the Heartland.”

Host Jayni Carey will prepare a complete meal, including the apple pie recipe below, which was provided by Mrs. Harold Johnson of Dwight. The Bayleaf’s Cool Tool segment also will be shown.

A new show debuts at 6:30 p.m. each Tuesday on Sunflower Broadband Channel 6 and repeats at 8:30 p.m. and 10:30 p.m. The show is also broadcast at 8:30 p.m. Wednesday-Friday, 9:30 a.m. Sunday and 8:30 p.m. Monday.

Sour Cream Apple Pie

1 egg
1 cup thick sour cream
1/2 teaspoon vanilla extract
1/2 teaspoon salt
3/4 cup sugar
2 tablespoons all-purpose flour
2 cups apples, chopped
1 unbaked pie shell

In a large mixing bowl, beat the egg. Add the sour cream, vanilla and salt and mix well.

In a separate bowl, combine the sugar and flour and add it to the sour cream mixture, beating well. Stir in the chopped apples.

Pour the filling into an unbaked pie shell. Bake in a 450 degree oven for 15 minutes, then reduce the heat to 350 degrees and continue baking for 30 minutes. Meanwhile, prepare the topping.

Topping

1/2 cup brown sugar
1/3 cup all-purpose flour
1/4 cup butter, chilled

In a medium bowl, combine the brown sugar and flour. Cut in the butter with a pastry blender or a fork until the mixture is crumbly.

After the pie has baked for 45 minutes, remove it from the oven and sprinkle on the topping. Return the pie to the oven and bake for 10 minutes more. Serves 6 to 8.
