
Signs indicate a popular KC ice cream shop plans to open in west Lawrence near Sixth and Wakarusa

Plans have been filed for a new ice cream shop to locate in the vacant space next to City Wine Market near Sixth and Wakarusa.
A growing Kansas City-based chain of ice cream shops that claims to have a grandma as a secret weapon is coming to Lawrence.
Betty Rae’s Ice Cream has filed paperwork at Lawrence City Hall for a permit for a west Lawrence location. The company hasn’t yet confirmed on its website or social media that it is coming to Lawrence, but a representative of the company told me more details about its Lawrence plans should be released soon.
The company is planning to locate in a vacant space at 4821 W. Sixth Street, which is the shopping center next to Dillons at Sixth Street and Wakarusa Drive, according to a document filed with the city.
So, we’ll have to see how this develops, but it certainly isn’t too early to start examining ice cream options on a July day. According to the shop’s online menu, the locations offer scoops, shakes, ice cream sandwiches and sundaes.
The company says its recipes were “inspired by a real grandmother who had a whimsical spirit for invention and preparing delicious treats.” Indeed, you can find some whimsy on the menu. The menu has about 20 “mainstay” flavors and approximately another five rotating flavors. The offerings include many of your traditional varieties, but also a few that make you wonder whether grandma is spending all her time watching the Food Network. (Grandma scoffs. It is TikTok, now days, don’t you know.)
For example, one of the mainstay flavors is a fresh goat cheese ice cream swirled with apricots and candied walnuts. Another is a lavender honey offering that features dried lavender buds. And there is one called cereal milk, which has Fruity Pebble ice cream, cereal clusters and marshmallows. (That sounds like a breakfast a whimsical grandma would make — right before she sends the kids home to their parents.)
The rotating special flavors appears to get more elaborate. There is a pineapple upside down cake that involves an actual sponge cake, toasted pecans, caramelized pineapples, and maraschino cherries.
And then there is this one that simply is called the Biscoff, but looks anything but simple as the Biscoff cookies are stacked, angled, crumbled and served in an eatable bowl.
The shop also features several cookies that it uses to make ice cream sandwiches, including on offering that is vegan, meaning both dairy and egg free ice cream and cookies. Its name: No Bullchip.
As for the company itself, its website says it began about 10 years ago in Kansas City. The website now list nine locations — primarily in the Kansas City metro but also in Omaha — with a 10th location coming to Shawnee. It looks like the company is in growth mode, as the website is advertising franchise opportunities.
In addition to its locations, the company also operates an ice cream truck that caters lots of events, and also has begun selling its ice cream in select area grocery stores, according to the website.
