Congratulations on being voted the “Best of Lawrence”! How does it feel to receive this recognition from the community?
Dan Esmond: We’ve been part of the Lawrence community for 30 years, and it feels incredibly rewarding to be recognized in this way. Our customers have always been supportive, and I know they’re just as excited about this honor as we are.
What do you believe sets your business apart?
Having been in this community for so long, we now serve second-generation guests–children of the customers who first visited us decades ago. That kind of loyalty and connection is truly special.
Can you provide a brief overview of your business’s history, including its founding, initial goals, and how it has evolved over the years?
I became the owner of this Perkins location in 1994, purchasing it from the parent company that had been here since 1980. From the start, our goal was to offer great food, consistent service, and a warm, welcoming environment. We’ve evolved over the years, but those core values remain the same.
How has your business grown since you first started? What key milestones have you achieved?
We’ve experienced steady growth every year. One of our proudest accomplishments is becoming one of the top 5 Best of Lawrence, which is a direct result of our team’s dedication and the community’s ongoing support.
Community support is crucial. How do you engage with the local community, and how has that shaped your success?
We make it a priority to participate in local events and fundraisers. Being involved in the community strengthens the connection we have with our guests and reinforces the idea that this isn’t just a restaurant–it’s a gathering place.
Can you share an example of how your business has embraced innovation to stay ahead?
We’ve adopted handheld ordering and purchasing modules to streamline our service and improve efficiency. It’s one of the ways we ensure our guests receive fast, attentive service every time they visit.
Every business faces challenges. What’s a significant hurdle you’ve overcome, and what did you learn from it?
We’ve been through quite a bit–most notably, a fire and the COVID-19 pandemic. Both were tough, but we came through stronger. We learned the importance of adaptability, resilience, and the strength that comes from a supportive community.
Are there any upcoming projects or changes you’d like to share with the community?
Yes! After 30 years, I’m excited to announce that the restaurant is being sold to a long-time employee, Domingo Gallardo. It’s incredibly meaningful to see the next chapter begin with someone who’s been part of our journey.
What advice would you give to aspiring entrepreneurs looking to build a successful business?
Stay close to your business and keep it personal. Strong relationships with your staff and the community are the foundation of long-term success.
The “Best of Lawrence” title often reflects a commitment to customer service. How do you ensure every customer has a great experience?
We focus on the little things–active online communication, a warm welcome, even something as simple as opening the door for guests. Those personal touches go a long way.
What motivated you to start this business, and how does it feel to see it thrive today?
After leaving the corporate world, I was drawn to Lawrence because of its community spirit and the presence of the University. Seeing the business flourish here and now receiving this recognition is incredibly fulfilling.
What role does employee training and development play in your ongoing success?
Our management team is hands-on when it comes to training. We believe in continuous learning–for both individuals and the team as a whole. It keeps our service consistent and our staff engaged.
What do you think has been the biggest contributor to your business’s growth and reputation?
The key has been our team’s consistent, meaningful interactions with guests. People remember how you make them feel, and our staff takes pride in creating a welcoming experience.
How do you stay ahead of changing trends and market dynamics?
We stay proactive by embracing new technology and keeping our marketing efforts fresh and motivating. It’s important to evolve without losing your core identity.
How do you ensure your business is inclusive and welcoming to all?
We prioritize hiring a diverse team and make sure everyone feels a part of the community. Inclusion is about more than policy–it’s about culture, and we take that seriously.
What leadership lessons have been most valuable to you throughout this journey?
There’s no substitute for personal interaction with guests. It’s where real connection happens and where leaders can make the biggest impact.
Is there anything else you’d like to share with the community?
It’s been an absolute honor to spend the last 30 years as part of the Lawrence community. We’re deeply grateful for the support, friendships, and memories made along the way.
