Congratulations on being voted the “Best of Lawrence”! How does it feel to receive this recognition from the community?
It feels great, especially only being open about a year and a half.
What do you believe sets your business apart?
Our wing sauces are made in house, we created most of the recipes ourselves, and we only use jumbo wings.
Can you provide a brief overview of your business’s history, including its founding, initial goals and how it has evolved over the years?
The original thinking behind the concept was a “ghost kitchen” idea. Then more of a food truck. We started looking for trucks, then we remembered Lucia had a kitchen that wasn’t in use and we reached out to them.
Could you share an example of how your business has embraced innovation to stay ahead of the curve?
To make it a little easier on the staff; because it’s a small kitchen we placed QR codes at the tables to allow guests to order and pay right there at the table. Some people not familiar with it struggle a little but once they are shown how to use it, it’s fairly easy.
Businesses face challenges as well. Can you discuss a significant hurdle your business has overcome and the lessons learned from it?
Since we are still fairly new and don’t have a big store front, some people don’t know we are here inside Lucia. So getting people in the door is a challenge. And some might think we are only wings; but we have excellent crab rangoon dip that we utilize in a crab mac ‘n cheese, and a crab rangoon grilled cheese sandwich. In addition to excellent burgers, and other mac ‘n cheese dishes, grilled chicken sandwiches, salads, and other delicious grilled cheese sandwiches.
What long-term goals do you have for your business, and how do you plan to achieve them?
One day it would be nice if we could grow out of the Lucia kitchen, but that is still a few years away.
How do you ensure that your business remains an inclusive and welcoming place for customers of all backgrounds?
Lucia is a very inclusive establishment, and we have been able to piggy back on a bunch of their efforts and events.
