Appetite for beef bodes well for Kansas cattlemen

? An industry expert says the recession in the nation’s food service industry appears to be over as people return to eating in restaurants. But consumers want more hamburger and cheaper cuts of steak on the menu.

Cargill foodservice vice president Keith Blanks told the Kansas Livestock Association convention in Wichita Thursday as they got an update on the consumer side of the industry.

Blanks says 2008 and 2009 were extremely depressing years for restaurants, but the trend has turned this year. The hottest trend is old-fashioned hamburgers, with eight out of 10 restaurants now serving them.

A livestock market analyst also says the cattle market has turned a profit for producers for the past 10 months, after three years of steep losses.
