1 1/4 cup emu egg
1/4 cup grated cheddar cheese
1/4 cup ground emu (cooked and spiced)
1/4 cup milk
1/4 cup diced green pepper
1 tablespoon butter
Dash salt and pepper
Warm butter in a frying pan over low heat. In a medium bowl, add emu egg, milk, salt, pepper, paprika and blend well. Pour mixture into heated pan. After one minute, sprinkle green pepper, cheese and ground emu evenly over egg mixture. When mixture is almost thoroughly cooked inside, carefully fold omelet over in pan and continue cooking until done. Remove omelet from pan and top with salsa.
