Recipes take cooking out of meal prep

Tahini Dressing

4 ounces of raw tahini

1/2 lemon, juiced

1 garlic clove

Pinch of cayenne pepper

Celtic sea salt

Blend all ingredients with enough water to make a dressing consistency. Serves 6.

Pesto

2 bunches spinach

1 bunch fresh basil

1/2 lemon juiced

2-4 cloves of garlic

1 cup pine nuts

1/2 teaspoon sea salt

1/2 cup olive oil

Clean and wash greens, blend garlic in a food processor, add remaining ingredients and blend again. Serves 4.

'Mashed Potatoes'

3 cups cauliflower

1/2 cup pine nuts

1/2 cup fresh thyme

1/4 lemon juice

2 cloves garlic

Pinch of sea salt

1/4 olive oil

Water

Blend all ingredients in a food processor and serve with gravy. Serves 4.

Gravy

One 16-ounce jar of almond butter

2 Roma tomatoes

1 medium red onion

2 garlic cloves

4 portabella mushrooms

1 cup water

Celtic sea salt, to taste

Mix all ingredients together in food processor. Serve over “Mashed Potatoes.” Serves 4.

Blended Salad

1 cucumber

1 stalk celery

Juice of 1 lemon

1 avocado

1 handful of spinach

1 tomato

Celtic sea salt

1/2 garlic clove

Blend and serve. No need to add water. If you don’t have a Vita Mix blender you will have to cut the vegetables into very small pieces and add them to the tomato, cucumber and lemon juice, which gets blended first. Blend, and add the remaining ingredients, avocado last. If you like, you can add red pepper or any other vegetables. Serves 2.

Mushroom Pizza

1 portabella mushroom

1 tomato

3 tablespoons of almond butter or tahini dressing

1 lemon, juiced

Clean and stem mushroom so you just have the mushroom cap. Clean mushroom caps and turn upside down. Pour lemon juice over it, and then add nut spread. Next, slice tomato very thin and place slices on top. Serves 2.

Pine Nut Pudding

1 cup pine nuts

1 cup soft dates

1 cup water

Blend all ingredients in a blender. Optional: Sprinkle with nutmeg. Serves 4.

Holiday Eggnog

2 cups almond milk

1 cup macadamia nuts

1/2 cup raw honey

1 tablespoon cinnamon

1/4 teaspoon powdered turmeric

1 vanilla bean

1 banana

Blend all ingredients and serve chilled. Serves 6.
