Megan’s Kid-Style Chili

—-

1 pound ground beef

1 10-ounce can condensed tomato soup

1 15-ounce can kidney beans or chili beans, undrained

1/4 teaspoon chili powder

1/4 teaspoon onion salt

dash of red pepper sauce

cheddar or Monterey jack cheese, grated

Crumble the ground beef into large pan or Dutch oven and brown over medium heat. Drain off excess fat. Stir in the tomato soup and the beans (with liquid). Add the chili powder, onion salt and red pepper sauce (this is mild for children, but more may be added). Cover the pan and simmer the chili for 20 minutes over low heat, stirring occasionally. Remove the lid and continue cooking the chili for 5 to 10 minutes more. Ladle the chili into bowls and garnish with grated cheese. Serves 4.

Tip: To make Chili Dogs: Grill, broil or boil hot dogs. Place the hot dogs in buns and top each with a generous spoonful of chili. Sprinkle with grated cheese.
