Dish tasted in Southwest earns place at KS table

Cooking Connection is a Journal-World feature that prints favorite reader recipes. This week’s featured cook is Christi Lanier, of Lawrence, with her Spicy Hominy Casserole.

Why it’s special: “This is a recipe that I was given about 30 years ago by a waitress in Santa Fe, N.M. This was on the menu, and when I asked what it was, she gave me the ingredients. I had to tweak them, but it’s so simple you can’t go wrong.

“This is one of my signature dishes for potlucks and family dinners. It goes with just about everything, so we have it for holidays, with Mexican food or just an ordinary dinner.”

Spicy hominy casserole

2 cans of hominy (drained)

1 small jar Cheez Whiz (or generic brand)

1 can cream of mushroom soup

1 can of chopped green chilies

Mix it all up and put it into a lightly greased casserole dish. Bake it at 350 degrees until bubbly. Add jalapeños for more spice.
