Coffee shop, cafe replacing bagel place

Bagels are giving way to a bistro in southwest Lawrence.

Bistro Bella – translation: Beautiful Cafe – is scheduled to open Oct. 1 at 3514 Clinton Parkway (above), inside the former home of Einstein Bros. Bagels. The bagel shop closed Wednesday.

The new cafe will feature coffees from PT’s Coffee, a Topeka-based roasterie. The drinks menu will range from a mild house blend to espressos, lattes, mochas and other blends, said Natalie Magill, general manager.

Foods will include paninis, salads, breads and imported cheeses, meats and olive oils, she said.

Also available: wireless Internet access, about a dozen employees and service from 6 a.m. to 10 p.m. daily.

Owners of the shop are Steven and Ron Stewart, owners of Blue Chip Cookies and Juice Stops in Lawrence.
