A Tasty Recipe to Bring an Old Staple New Life

In our effort to save money, my family has decided to eat more home cooked meals. I don’t know about any of you, but I do sometimes get in a rut when it comes to cooking. We all have our quick go-to meals, but I’m looking to expand my list of standbys. I’m hoping this will get me in the habit of keeping a well-stocked pantry.

In today’s Walgreens ad you’ll find $1.89 Chicken of the Sea Pink Salmon (coupon). Growing up, my mom always kept canned salmon in the pantry. She liked using it in salads and pasta dishes. I found a great salmon cake recipe on the Food Network Web site.

I made these today, and they were fabulous. Light and crispy on the outside; very moist and flavorful on the inside. The onion and bacon add a nice depth of flavor. I served this with brown rice and green beans on the side. Green Giant steamer bag beans are $1.69 at Hy-Vee, plus I had a 40-cent coupon. I had all the ingredients in my pantry except the canned salmon, potatoes for the recipe (the russets are on sale at Hy-Vee 2/$1) and the beans. Not only is this meal healthy and delicious, it is so affordable.

I like Salmon cakes and that recipe looks like a winner if I ever get the energy. First I need to figure out how to turn on my stove.

Those look delish! My mother used to make salmon patties, macaroni and cheese and peas. It was one of her kids favorite meals. Sometimes she would make creamed peas and that was even better.

Jiminy! Why go to all that trouble on a cheap food source? Use my mom's old standby recipe: a can of salmon (without the water, and oozy parts), 2 eggs, and cracker crumbs. It's not complicated, it's not expensive, and a kid will eat them (a little tartar or cocktail sauce helps).

I love grilled salmon steaks as well Dillons has been selling them for half price for weeks now and I've been taking advantage of it. What I don't use for grilling I use for fish tacos and then the remainder gets tossed into a salmon quiche...Yeah, I know 'real' men don't eat quiche, but I'll bet most of those of you on here do..... I add broccoli and cream cheese along with the four to five eggs, whipping cream, paprika, sea salt and pepper to taste, mozzarella cheese - so tasty and healthy (well, sorta!)

I love salmon patties too....I agree with the eggs and ground up wheat saltines...too easy not to be great. I like horseradish with mine. or washabi or mayo....or tartar sauce. Okay, even ketchup or mustard.....

Canned salmon is great, especially the bones and skin ! I buy it all the time. The response from most people to the product is kinda like their response to Spam. Somehow that product got a bad rap years ago; its just ham; the Hawaiians love it.

Multi: I can eat quiche until the cows come home but I don't know how to fix/make it. Too much work. Last night I made a nice shrimp scampi but anybody can do that in a few minutes.

My husband gave me a quizzical look when I told him I was making salmon cakes from canned salmon. I'm happy to say, that he is now a believer that you can take this inexpensive item and turn it into a flavorful dish. The potato gives it a moist texture and the bacon/onion combo adds a good flavor balance.

I hope to continue to bring a variety of ideas to the blog. And I hope that you all will share yours.
