Meatless Monday recipe of the week: Blueberry, Cranberry and Orange Salad

If you haven’t had a blueberry yet this season, you’re definitely missing out.

They’re just starting to get perfectly plump and as a bonus, their prices have started to come down a bit as they come into season.

That means more blueberry bang for your buck.

And, not that you’ll have trouble riding yourself of them, but if you need a recipe, check out this sweet salad. It utilizes not only ripe blueberries, but fresh spring mix you can buy locally, as well as the primo combination of oranges and cranberries.

Blueberry, Cranberry and Orange Salad

2 cups blueberries

2 packages dried cranberries

3 each Valencia oranges segmented

4 cups spring mix

Olive oil and basalmic vinegar dressing

Sea salt

Fresh ground pepper

In a bowl, combine the first 4 ingredients. Place the spring mix, evenly, on 4 salad plates and top with the berry mixture. Add desired amount of dressing and season with salt and pepper. Serve chilled.
