Recently closed Eudora eateries quickly filled

Two closed Eudora eating establishments didn’t stay empty for long.

Last week, we reported that Eudora City Hall staff was confident the closed The Fork restaurant at 826 Main St. would soon have a new tenant. Those visiting downtown Eudora have probably noticed the presence of the Torched Goodness food truck parked by the small restaurant.

Julia Ireland, who runs the food truck with her husband, Eric Ireland, said the couple indeed have rented the building. At this point, they conceive using it as kitchen space for their food truck operation, which travels to the events they cater and festivals and fairs they attend. However, she said there was a possibility it would be open on occasion. They would have better developed plans once they move into the building March 1, she said.

Transition plans are much further along for an opening of a new restaurant at the closed Cosmic Ale House and Grill. Kristy Buster said she would relocate the Mighty Tamales she started about five months ago at the Lawrence VFW, 1801 Massachusetts St., to the restaurant at 2229 North 1400 Road in her hometown of Eudora. She’s shooting for a March 1 opening.

“I was able to get my own place,” she said. “We were a good startup kitchen at the VFW. Now people know who Mighty Tamales is.”

Buster said she has been active in the kitchen since she was in primary school. Mighty Tamales is a result of cooking interest and her early Texas childhood.

“I’ve loved cooking since I was a kid,” she said. “I’ve always tried different things. A couple of years ago, I tried tamales, and I found out I made great tamales.”

Tamales may be in the name, but she said once she opens there will be a broad variety of Tex-Mex fare for all times of day.

“I can say confident we should be open seven days a week — breakfast, lunch and dinner,” she said. “Everybody in Eudora is wanting a breakfast joint, and yes Eudora I will be having breakfast. That seems to be a very big topic around town. It just so happens I make a pretty good breakfast.”

Buster’s new site affords opportunities beyond food.

“There is a setup for live entertainment,” she said. “Hopefully, that will be something we can enjoy. It’s going to be a pretty smashing little restaurant I think people will enjoy.”
