Last brisket we did had a blend of hickory and cherry wood and turned out wonderfully. The fruit wood mellows the hickory so its not overpowering. Pull apart the slices with your fingers tender. Dang, now I'm getting hungry!

LJW-you might also be interested to know that the contract being moved out of Lawrence has an on-going case with the board of labor over back pay owed due to improper wage determinations and job classifications. Not Kansas Board of Labor--federal.
