On the Heinz ketchup bottle, it says 57 varieties. What does that mean, 57 varieties of what?

There never were exactly 57 varieties of condiments produced by Heinz, according to the book "Reinventing Ketchup: How Heinz Is Creating a New Global Brand" by Ken Banta. The H.J. Heinz Co. Web site, www.heinz.com, offers only that founder Henry James Heinz coined the phrase "57 varieties" in the late 1800s. At the time, the company was best known for its pickles and ketchup.
