Dan Nagengast, owner of Seeds from Italy and rural Lawrence resident, points out spinach in his garden that has bolted, or produced flowers earlier than expected because of fluctuations in temperature. Besides the leafy greens, radishes, turnips and mustards are also prone to bolting in extended cool periods.
