Off the Beaten Plate: Boti Kabab at India Palace
While you won’t find it on the menus of many Kansas barbecue joints, lamb’s strong flavor is actually a great match for a bit of char. Boti Kabab — on the tandoori menu at India Palace — consists of chunks of marinated lamb cooked in a clay oven, then served on a sizzling-hot platter with peppers and onions. The seasoning is rich and earthy with a hint of heat, and the portion is big enough to fill two people.
