The cooks at the Sertoma 48 BarBQ contest will all be grilling, but the end product — whether the meat is rubbed, smoked, marinated or glazed — is a different story.

“It might all be pork butt, but they have a different spin and flavor,” coordinator Sandra Studley said.

On Saturday, a wide variety of barbecue will be available at Broken Arrow Park, near 31st and Louisiana streets. From 11 a.m. to 2 p.m., the public can taste samples of pork butt and beef brisket and pick a “People’s Choice” winner. The cost is $6.

Of course, the smell is free, Studley said.

Teams from around Kansas and Missouri will arrive on Friday to set up camp and start the grilling process. Many will stay up all night to create the perfect barbecue.

On Saturday, the event opens to the public for a breakfast served at the nearby Wakarusa Township Fire Station from 7 a.m. to 9 a.m.

This year, the contest, a state championship, filled up early and 10 teams are on the waiting list, Studley said. Entries are capped at 48 teams. The teams compete in 48 categories with $4,800 in prizes and a chance to advance to the American Royal Cook-Off in Kansas City, Mo.

The money raised from the event will go toward the Sertoma-Schiefelbusch Communication Camp, which is a collaborative effort between the Lawrence Sertoma Club and Kansas University’s Schiefelbusch Speech-Language-Hearing Clinic. The camp brings together children who have communication challenges.
