Sweet take on rice stars at family reunions

Cooking Connection is a Journal-World feature that prints favorite reader recipes. This week’s featured cook is Caroline Flory of Lawrence, with her recipe for Heavenly Rice.

Why it’s special: “My mother, Edna Torneden, always took this to the Torneden family reunion. She always came home with an empty bowl. After her death, family members came up to me and my daughter asking, ‘Where’s the Heavenly Rice?’ Guess I’ll have to fill in at our next reunion.”

Heavenly Rice

1 cup rice (not instant)

4 cups water

1 teaspoon salt

30 large marshmallows

2 cups sugar

2 cups crushed pineapple

2 cups whipping cream

Cook rice until tender, using water and salt. While hot, add marshmallows, sugar and pineapple. Refrigerate until mixture is very cold.

Whip cream until it stands in peaks. Fold whipped cream into cold rice mixture. The flavor will improve if it sets overnight.
