Jayni’ feasts on Octoberfest

"Jayni's Kitchen" will feast on the flavors of Germany this week with "Celebrate Octoberfest."

Host Jayni Carey and Lora Duguid from au Marchill prepare several traditional German dishes, including the potato salad below.

A new show airs at 6:30 p.m. Tuesday each week on Sunflower Broadband Channel 6 and repeats at 8:30 p.m. and 10:30 p.m. The show is also broadcast at 8:30 p.m. Wednesday-Friday, 9:30 a.m. Sunday and 8:30 p.m. Monday.

Kartoffelsalat Mit Biermarinade (Potato Salad With Beer Dressing)6 medium potatoes4 bacon strips1 tablespoon onion, finely chopped1 celery rib, finely chopped1 teaspoon salt2 tablespoons butter2 tablespoons unbleached flour1/2 teaspoon dry mustard1 tablespoon sugar1 cup beer1/2 teaspoon Tabasco sauce2 tablespoons fresh parsley, choppedRinse the potatoes and boil them in large pot of boiling water until tender, approximately 30 to 40 minutes. Drain the potatoes and let cool 5 to 10 minutes; peel and slice. Place the potatoes in a large serving bowl.Fry bacon in a skillet over medium heat until crisp. Remove the bacon and drain on paper towels. Crumble bacon and mix with onion, celery and salt in a small bowl and set aside.For Beer Dressing, melt the butter in a small saucepan over medium-low heat. Add the flour and stir until blended. Add dry mustard and sugar. Slowly stir in beer and Tabasco sauce. Raise heat to medium and bring mixture to a boil, stirring constantly. Pour mixture over potatoes and mix gently.Add bacon mixture and mix gently again. Sprinkle with parsley.Makes 4 to 6 side-dish servings.
