Cooks who enjoy using their noodle can start from scratch this week with "Jayni's Kitchen."
Host Jayni Carey and her husband, Frank, will prepare fresh pasta and other recipes, including the spaghetti below.
A new show airs at 6:30 p.m. Tuesday each week on Sunflower Cablevision Channel 6 and repeats at 8:30 p.m. and 10:30 p.m. The show is also broadcast at 8:30 p.m. Wednesday-Friday, 9:30 a.m. Sunday and 8:30 p.m. Monday.
Spaghetti: With Harlot Sauce
2 tablespoons olive oil
2 large garlic cloves, minced
1 28-ounce can Italian plum tomatoes, undrained and chopped
2 tablespoons fresh basil leaves, chopped
pinch red pepper flakes
8 ounces fresh Italian sausage (optional)
Parmigiano-Reggiano cheese, grated
1 recipe freshly made spaghetti, cooked (can substitute four servings of dried spaghetti)
Heat the olive oil in a large skillet over medium heat. Add the garlic and cook, stirring just until it begins to color, one to two minutes. Stir in the tomatoes, basil and red pepper flakes. Simmer the sauce over medium heat for about 15 minutes, stirring occasionally, until it begins to thicken.
If desired, chop the Italian sausage into bite-size pieces and brown in a skillet over medium heat. Drain sausage and add to the sauce. Simmer for 15 minutes.
Place the spaghetti in a large serving bowl. Add sauce and toss to combine. Sprinkle with grated cheese.
Makes four servings.
