Recipes share cooking secrets

Every recipe in a new cookbook comes with an informative sidebar by the time you've read about it and made the dish you've also learned a cooking skill.

The book is Better Homes and Gardens' "Simple Secrets to Better Everyday Cooking" (Meredith, $29.95). The information can be a guide to wild mushrooms, advice on one-pack meals or how to use phyllo dough.

Along with this quick-cooking recipe for Almond Chicken With Yogurt Dipping Sauce, for example, you get a briefing on dredging (at right) the kind of coating the chicken gets here.

The book features about 300 recipes, plus relevant cooking tips, and plenty of color photos.

Almond Chicken With Yogurt Dipping Sauce

(Preparation 15 minutes, cooking time 10 minutes)

1/4 cup all-purpose flour

1 cup soft bread crumbs

1/2 cup chopped almonds

2 tablespoons snipped fresh cilantro

1 1/2 teaspoons curry powder

1 egg

1/2 cup milk

1 1/2 pounds skinless, boneless chicken breast halves

1/4 cup cooking oil

Yogurt Dipping Sauce (recipe follows)

In a shallow dish place the flour. In another shallow dish, combine bread crumbs, almonds, cilantro and curry powder; set aside. In another shallow dish beat together egg and milk; set aside.

Cut chicken, lengthwise, into 1-inch-wide strips. Coat strips with flour, dip in egg mixture, then coat with almond mixture. Heat oil in a large skillet. Carefully add strips to hot oil. Cook over medium heat for 10 to 12 minutes or until chicken is tender and no longer pink, turning once. Drain on paper towels. Serve with Yogurt Dipping Sauce.

Makes 6 servings.

Yogurt Dipping Sauce

8 ounces plain yogurt

2 tablespoons snipped fresh cilantro

1 tablespoon honey

Stir together yogurt, cilantro and honey; use immediately or cover and chill in the refrigerator until needed.
