'Jayni' savors French flavor

"Jayni's Kitchen" takes a tour of European flavor this week with "A Taste of Provence."

Host Jayni Carey will prepare several French dishes, including the recipe below.

A new show airs at 6:30 p.m. Tuesday each week on Sunflower Cablevision Channel 6 and repeats at 8:30 p.m. and 10:30 p.m. The show is also broadcast at 8:30 p.m. Wednesday-Friday, 9:30 a.m. Sunday and 8:30 p.m. Monday.

Prosciutto Rolls With Goat Cheese



4 ounces soft goat cheese

1/4 cup cr fraiche (a rich, thick cream cheese)

3 to 4 ounces prosciutto ham, sliced paper-thin

extra-virgin olive oil

freshly ground black pepper

In a small bowl, combine the goat cheese and cr fraiche, blending with a fork until smooth.

Cut the prosciutto into strips about 3 inches wide and 4 inches long. Put 1 tablespoon of the goat cheese mixture on the end of each strip and roll up firmly.

Put a small amount of olive oil in a shallow dish or serving tray. Arrange the prosciutto rolls on the tray. Drizzle with olive oil and sprinkle with freshly ground black pepper.

Cover and refrigerate for at least 3 hours. Remove from refrigerator 20 minutes before serving.

Makes 10 to 12 prosciutto rolls.
